Apple Cake recipe

Apples in cake? You bet - and it's a recipe that can be whipped together in a single bowl. Finish off the cake with your favorite whipped cream or frosting recipe, such as vanilla or lemon.

Ingredients:

2 cups diced apples
1 ½ cups all-purpose flour
1 cup sugar
½ cup vegetable oil
1 egg, beaten
1 teaspoon baking soda
½ teaspoon cinnamon
½ teaspoon salt

Directions:

1) Preheat oven to 350°F. Lightly grease an 8-inch round cake pan.

2) Combine all ingredients in a large bowl; whisk until lightly mixed. Pour into prepared cake pan and bake until a toothpick inserted in the middle comes out clean, about 30 minutes. Remove from oven and cool 15 minutes; remove from cake pan and cool completely.

This recipe was super easy to follow, and it tastes amazing. I only had to bake it for 20 minutes, rather than 30. I think I might make this more often!

I made this recipe today. I used 4 cups of small chopped apples, in a 8x8 inch glass pan. At 350 degrees it took 55 minutes to bake and have the cake rise properly before it was done. I also sprinkled Heath English Toffee Bits over the top of the batter before baking. Easy to make but have tasted better, it was just o.k.

I doubled the recipe, but used only half the sugar. Substituted applesause for the oil. Baked in bundt pan for 50 min. Delicious and easy!

I made it with double quantities of everything except sugar. It took longer than stated to bake, but the result is really wonderful, in spite of my having doubts while I tried to mix the dough, which is really stiff. An easy and delicious cake.

This was not a "whisk" recipe. I added another egg and then some kefir until it was mixable. I also doubled the recipe and mixed pears and apples, along with some dried cranberries. Took about 50 minutes but worth it!

Really easy to make, tastes great. I added some brown sugar on top before baking and a bit of melted butter to mix the batter easier. Next time I'll grate the apples, kids didn't like the pieces :)

I have been making this cake for years and everyone loves it. I add 1/2 cup chopped walnuts and bake for closer to 50 minutes. My family wants to eat it for breakfast the next morning. The texture is not like a traditional cake.

I hadn't baked a cake before but, as I had a lot of apples lying around, I decided to give this recipe a try.

I didn't use cinnamon as I didn't have any. I substituted half the sugar for honey; the vegtable oil for rice bran oil.

I'm very happy with the result and glad I gave it a try.
